Delicious Cauliflower Rice

This is healthy diabetic recipe as it is fullfilling and overall glycemic load of the dish is low, it is tried and tested by many of our community members and they like the taste of this recipe. All the ingredients are raw food with high fiber and nutrients. All the ingredients are easily available to us.
Ingredients
- Cauliflower Rice.
- Cauliflower florets 4-5 separate from the head n washed n grated.
- Brocolli florets separated n finely chopped. Make sure the Broccoli head is green n does not have yellow flowers.
- 1 carrot diced finely
- Handful of fresh peas (optional).
- Fresh Coriander finely chopped.
- One onion finely sliced.
- Grated ginger 1tblsp.
- Juice of 1 lemon
- Salt to taste
- 3 Tblsp of oil.

Nutrient Rich Fulfilling Meal Recipe
All the ingredients are nutritious and and fall under low to medium glycemic index which keeps the overall glycemic load low. Hence this is diabetic friendly recipe which can be considered to eat as lunch or dinner.
Instructions
- In a wok, pour the oil, n tamper it with cumin. Add the curry leaves.
- Add the ginger saute it for a minute then add the onions.
- Once the onion are pink, add the finely diced carrots, n saute this for 4-5 min.
- Next add the Broccoli n saute it.
- All this is to done on medium high heat.
- Add the peas. Now add the salt and the grated cauliflower.
- If u find it bland in colour add quarter teaspoonful of turmeric.
- Mix well for 2-4 minutes. Remove from fire n add lemon juice. Garnish with coriander n serve.
